Hangover Status Cheesy Potato, Sweet Pepper and Chorizo Bake

There are just some of those days. Most of mine start with not enough sleep. Maybe you fell asleep substantially earlier than you planned on, coincidentally staying up for the remainder of the night and snoozing through three of your alarms. Maybe you had a late night out where you just said "screw it" and dragged into work with a Red Bull and the full Mcdonald's breakfast menu. I have even had days where I put on pajamas, got cozy and proudly planned to go to bed early, until the phone rang and destiny called saying there was something a little more fun than bedtime to attend. Whatever the case of your "hangover status", this dish is literally perfect for every rehabilitating aspect. Okay, well probably not for your extra hour at the gym tonight, but you can always add lean turkey sausage and part-skim cheese if the bliss is too much for your body to handle. 

At any cost, I say spoil yourself! Go for seconds and even pack it for lunch the next day. I only know that this is purely a necessity because I ate it for the next three meals; each time being more impressive than the last.

Baking casseroles happens to be one of my specialties and has become a ritual now living on my own. Popping dinner into the oven, ready in an effortless hour and leftovers already prepared for the next day and night; it's purely genius. With this being said, living in a cutesy, uptown apartment is darling, however not completely ideal. Having more dishware, utensils and appliances than your grandmother- the hoarder, really just doesn't leave me a lot of room in the kitchen. At this point, I honestly don't even own a microwave. 




Sometimes you just have to pick and choose. Trendy kitchen with guest-ready decor, or booze-induced food cravings being warmed up at late hours of the night.  Let me just stop right there and tell you how incredible and handy that would be after a 12 hour shift, quick breakfasts on the go or just to simply satisfy my half-way-lit, post-bed, binge eats. At any cost, I do NOT own a microwave or toaster oven, and most times it's actually alright with me. 

While using an oven to heat everything is slightly more time consuming, it is almost better tasting and I have found quite a few great late-night snack compilations. Baking cheesy nachos in the oven is one of my favorites. Simply covering a sheet of foil with tortilla chips and sprinkling with cheese is a quick and easy crave-worthy option. Bake and add your toppings afterwards. It is quick, easy and the cheese melting ratio is ON POINT. 

In all efforts to make things work, I have also learned that homemade fries and chicken wings taste pretty decent cold when you are hungry. Especially when you have a collection of different sauces available for sampling. Needless to say; honey, I am definitely home and baking something marvelous- even if it is using up all the counter space and can't be reheated. 




Cheesy Potato, Sweet Pepper and Chorizo Bake

6 Medium Spicy Chorizo Sausage Links
1 Tablespoon Olive Oil
4 Medium Gold Yukon Potatoes, Cubed
1 Cup Organic Sweet Baby Carrots
1 Cup Sliced Multi-Colored Sweet Baby Peppers
1 Teaspoon Salt
1/2 Teaspoon Black Pepper
1 Teaspoon Garlic Powder
1/4 Cup Sweet Heat Barbecue Sauce
1 Tablespoon Sriracha Chili Sauce
2 Tablespoons Pineapple Juice
Fresh Cilantro Leaves
2 Cups Finely Shredded Mozzarella Cheese
Cracked Black Pepper

Preheat oven to 350 degrees. In a large greased frying pan heat chorizo over medium heat. Sear on both sides, covered, until browned completely. Remove from heat and place onto a cutting board to cool. When meat is cool to touch, slice chorizo and set aside. In a large 9 x 13 glass baking dish add olive oil and cover with cubed potatoes. Add baby carrots, sliced sweet peppers and season with salt, pepper and garlic powder. Set aside. In a small mixing bowl add barbecue sauce, sriracha chili sauce and pineapple juice. Whisk together and pour over potato bake. Gently toss ingredients in sauce until lightly coated. Sprinkle with fresh cilantro leaves to taste and cover with shredded mozzarella cheese. Sprinkle with a light dusting of black pepper and cover dish with a layer of aluminum foil. Place potato bake into preheated oven and bake for 50-60 minutes. Carefully remove foil and let cool before serving. Dish should be bubbly and cheese golden brown.
