Sloppy Joe's Topped with Zesty Asian Slaw

Sloppy Joe's are probably one of the easiest dinner ideas you can come up with. I decided to give up taco night for something a little bit different. You can always skip a step and use a pre-made sloppy Joe sauce or seasoning packet but its always worth the extra effort when its made from scratch.

Because this recipe is so versatile, it really does make dinner quick and easy. Throw in whatever condiments you have sitting in the fridge and if sloppy Joe's aren't really your thing, add a topping of slaw or melted cheese to adjust to your taste. 

I cant help that I love vegetables- and dips and sauces are my jam, so naturally I concocted a quick slaw to top my sloppy Joe with. Because I was a little low on ground beef, I added a couple pork sausages, that were stuffed with peppers and onions so it saved me the trouble of cutting up any extra vegetables.

Add a side of fries, or wavy potato chips and dinner is served!

Sloppy Joe's Topped with Asian Slaw
Served on a Toasted Ciabatta Roll

Sloppy Joe's


1/2 lb lean ground beef
1/2 pound ground pork
(or 2 sausages, out of their casing)
1/4 cup white onion, diced
1 tsp minced garlic
1 can tomato soup
1 tbsp spicy mustard
1 tsp white vinegar
1/2 tsp fish sauce
1 tbsp packed brown sugar
1/2 tsp salt 
1/2 tsp black pepper
1/2 tsp garlic powder
water

toasted ciabatta rolls





In a medium pan add ground beef and pork and heat over medium heat. Stir until browned. Drain grease and return to pan. Over low heat, season with garlic, tomato soup, spicy mustard, white vinegar and fish sauce. Stir until well combined. Reserve can of soup and refill with water to thin out sauce as it heats. Season meat with salt, black pepper and garlic powder. Stir over low heat until ready to serve. 






Asian Slaw

1 1/2 cups shredded green cabbage
1 cup match stick carrots
1/2 cup white onion, diced
2 tbsps chopped cilantro
2 tbsps chipotle mayo
1 tsp white sugar
1 tsp lime juice

In a small mixing bowl add green cabbage, matchstick carrots, diced white onion and cilantro. Add chipolte mayo, sugar and lime juice and mix until completely combined. Chill, covered in the refrigerator until ready to serve. 

To prepare, toast a ciabatta roll on both sides and top with warm sloppy Joe mix. Cover with chilled Asian slaw and any additional desired toppings. Serve immediately.

4-6 servings.
