Toasted Ciabatta Cream Cheese Jalapeno Popper Burgers

Ah, a good old fashioned cheeseburger and fries. Nothing sounds better after a long day at work. Well, of course, not having to cook or clean sounds best- but regardless, I love a good cheeseburger. Browned to perfection, topped with fresh veggies and plated with a stack of crispy fries, I definitely could go for one of these right about now.

I always go for an extra stack of cheese whether melting over top, or stuffed inside the burger. My favorite kind of burger is served on a toasted bun and served with plenty of sauces and textures. Depending on my mood, I have a couple variants to my flavor combinations. On some occasions I enjoy a classic cheeseburger with white onion slices, a thick vine ripe tomato and a squirt of chipotle mayo. This traditional burger tastes great with a handful of wavy potato chips and a few pickles on the side.

Another one of my favorites is of course the royal with cheese. My go-too when its a little too late for breakfast, a little to early for lunch. I like this burger on a soft bun or pretzel roll with and egg over medium, crispy bacon and sriracha sauce. Pair with a couple potato wedges or rosemary sweet potato fries and wa-la!

Jalapeno Popper Cheeseburgers
Stuffed with Cilantro and Cream Cheese

INGREDIENT LIST

1 lb lean ground beef
1 tsp kosher salt
1 tsp ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp paprika
1/4 tsp cayenne pepper

1/4 cup cream cheese, cubed
4 tbsp shredded cheddar cheese
3 tbsp diced jalapeno, seeded
8 slices sharp cheddar cheese
2 tbsp cilantro, chopped
Cajun seasoning to taste

For less heat, try using a pablano pepper in place of the jalapeno. If you are a real daredevil, keep the jalapeno seeds and stuff them inside your burger or double up on peppers.

TO PREPARE

In a medium sized mixing bowl add ground beef. Season with salt, black pepper, garlic powder, paprika and cayenne pepper. Mix together with hands until completely combined. Divide meat into 4 quarters. Take each and press into a flat and round hamburger patty. Make sure the meat is packed tightly. Press slightly in the center, hollowing just slightly to stuff.

Leave your cream cheese in the refrigerator until ready to prepare and it will be easier to cube for stuffing your burgers.

Add cilantro, diced jalapenos, cream cheese and shredded cheddar. Gently cover, using edges of meat to cover cheese completely. Press hamburger patty back into a flat round shape and set aside. Season with Cajun seasoning to taste.

Heat large frying pan over medium heat and add burgers. Let cook for 5-7 minutes before flipping. Brown on both sides until a light char has formed and the burger is cooked thoroughly. Reduce heat to low and add two slices of cheddar cheese over each burger patty. Cover and let cheese melt completely. Place each burger on a dry paper towel to drain grease and place on your bun of choice. Top with mayonnaise or any desired condiment of your liking. Add lettuce, tomato or onion to top off the burger and serve immediately.

my ideal burger: Loaded with chipotle mayo, tomato & onion, served on a toasted ciabatta bun with fries and a pickle
his ideal burger: Topped with extra cheese and served with crispy salted french fries and ketchup
