Family, Food, & Crock Pot Carnitas, Orale!

Family can be a very complex issue. With every family there is a heavy assortment of love and emotional baggage . Some good, some strong, some filled with tear-jerking passion. Families are filled with angry ex-wives and mother-in-laws, troublesome toddlers who stomp and scream, and infants who know nothing more than giggles and smiles. You can tell a lot about a family by what their children portray; the great, yet personally unflattering reality of natural innocence. Of our many loved ones, there are three relevant kinds of family. Your close net- husband, wife, and kids, "home-made-family", your parents and their parents, and all of their encounters-"family", and the "not-related-but-almost-more-efficient family". Some people are naturally content with their family, some lost in the devastation's of a family trauma, and some are just welcoming a new member to the world as we speak. The truth is, even if we pretend family is a perfect, cookie-cutter relationship- that is just not true. Family comes with monumental up’s and down’s just like any relationship, but when executed properly, family can be the best thing that ever happened to you. 

Lets focus on some more positive aspects of family. Your first family members invited you into this world- whether welcomed or planned, you are here now and you can thank them. Family can be warm and wonderful; a shoulder to cry on, a best friend to vent to, someone who waits impatiently by the door for your arrival. Family can create your own something magnificent- a tiny being that is a certain extension of yourself. 


You may not have substantial family issues that you need to resolve, but every once in a while it is a good idea to remember where you came from, what makes you possible, and cherish those who surround you with love. Look through a couple old family recipes today, thumb through some old photos. Don’t forget your family, don’t forget your roots, and especially don’t forget that food is the heart of a good mind, body and soul. Refer back to your great ancestors if you get lost along the way.

My family’s perfect combination platter for this dinner would be- soft Jasmine rice, Margarita infused re-fried black beans, carnitas, large cut fresh tomatoes, a dollop of guacamole, spritz of sour cream, a couple dashes of hot pepper sauce, and warm corn tortillas on the side. Crock Pot Carnitas  - Carnitas Olla De Barro




INGREDIENTS

3 Pounds Pork Cushion, Cubed
2 Medium White Onions, Cubed
5 Cloves Garlic Diced
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Ground Cumin
½ Teaspoon Paprika
½ Teaspoon Chili Powder
½ Teaspoon Garlic Powder
1 (12 ounce) Regular Beer (I used Carona)
1 (12 ounce) Can Original Cola (I used Coca Cola)
Juice from 2 Limes, Plus Peels For Flavor

Water to Cover




DIRECTIONS - INSTRUCCIONES


In a large crock pot add large cubes of pork cushion, white onions, garlic cloves, and heat to high heat. Season meat with salt, pepper, ground cumin, paprika, chili powder, and garlic powder. Over pork, pour one beer, one can of cola, and the juice from each lime before adding peel to contents. Gently stir all ingredients. Meat should be covered in liquid. Add water if level of ingredients to liquid needs to be adjusted. Cover and let meat cook on high for 5 hours, stirring only about once an hour or less. To make pork more tender, cook for 1 added hour at a time, until preference has been met. When carnitas have been finished, serve meat warm inside a corn (or flour) tortilla and/or on a bed of rice.

Guacamole If You Dare - Guacamole Si Te Atreves
                                                                        
INGREDIENTS                                                                                        
 2 Large Avocados, Peeled & Seeded
1 Medium Vine Tomato, Diced
6 Whole Garlic Cloves
1 Medium White Onion, Diced
2 Tablespoons Sriracha
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
¼ Teaspoon Chili Powder
¼ Teaspoon Ground Cumin
1 Tablespoon Olive Oil



DIRECTIONS - INSTRUCCIONES                                                                  

In a medium sized mixing bowl, halve avocados, remove seed and begin to mash by hand until chunky and paste-like. Set aside. In a medium-large blender, add tomato chunks, garlic cloves, onions, sriracha, garlic powder, onion powder, chili powder, ground cumin, and olive oil. Cover and blend on a high speed, until all ingredients are in a fine and thick consistency. Place avocado, cubed over blended ingredients and blend until thin and creamy. Stir with a spoon or spatula and remove from blender. When well mixed, cover and place in a cool refrigerator for at least 1 hour before serving. Serve over Carnitas or on tortilla chips.
