Goulash: Beer Sausage & Shells



When I was little I can remember my Grandpa making a dish called Goulash,  pretty often. I don't remember him cooking a lot, but this really stuck out in my mind. Every night at grandma and grandpa's house, we would eat dinner at exactly 6 o'clock while we ate our iceberg lettuce-salads with Hidden Valley ranch dressing and watched the 6 o'clock news. I remember eating many casseroles and pies, but grandpa's goulash was something I had never quite tasted before. He would use large elbow macaroni noodles and a red sauce; ground beef and kidney beans. I remember cubed tomatoes and other assortments of vegetables mixed in. Surprisingly for a picky child, I enjoyed every bite of it. It was served warm with any assortment of cheese or crackers.  




In an attempt to do something different than spaghetti, on a fairly low budget, I decided to make my own "Goulash" and it was probably one of my best. Using my favorite "shell" noodle, a delicious tray of beer-sausage, basic spaghetti sauce and a seasoned side of onions and peppers- I created a dinner that was both filling and delicious.

Watch out on that filling part, I could eat a whole tray of this stuff!




Beer Sausage Goulash



1 Tray, Mild Italian (I used beer) Sausage
2 Cups Spaghetti Sauce
Water
1 Medium White Onion, Sliced
1 Green Pepper, Sliced
1 Tablespoon Olive Oil
1/2 Teaspoon Salt
1/2 Teaspoon Black Pepper
1/4 Teaspoon Season Salt
1 Box Shell Noodles, Cooked
Parmesan Cheese


In a large frying pan, add 1/4 cup spaghetti sauce, 1 cup water and entire package of whole sausages. Cover and cook over medium heat until sauce has thickened. Add water, 1/2 cup at a time and stir until it has become a thin red sauce. In a mixing bowl, add sliced onion, green pepper, olive oil, salt, pepper, and season salt. Mix together until fully seasoned and add half of the onion mixture to sausages. Set remaining ingredients aside. Cook sausage until browned and fully cooked at 160 degrees. Reduce to medium low heat, and slice sausages into small pieces. In a separate pan, add 1-2 cups cooked shell noodles per serving. Heat to medium heat and add 2-3 tablespoons spaghetti sauce. Stir. Add peppers, onions, sausage and cover until warm. Serve warm with Parmesan cheese.
