The 12 Days of Christmas Cookies: Snickerdoodle
This year, December 1st marks the first day of my 12 Days of Christmas Cookies Extravaganza. I'll be posting a new Christmas cookie recipe each day for 12 days in hopes of inspiring the culinary Christmas spirit out of you all. Christmas is by far the most wonderful time of the year for me. I'm also quite sure my family can agree that any time cookies in production, it's a jolly time of the year for them as well.
Each year I have big dreams of making candy cane cut-out sugar cookies with the kids and gingerbread cookies with little buttons and noses. I intend to bake holiday kiss cookies for our Christmas party and peppermint flavored white chocolate chip cookies for the family on Christmas Eve. All my plans are extreme, more often than not, but this year I'm determined to make all 12 of our Christmas favorites (not including of course our favorite White Chocolate Peppermint Bark, Cinnamon Whisky Eggnog and other non-cookie holiday specialties).
Sometimes, in my household we make cookies just for the fun of it and don't get around to eating them all, and who wants to. (I know a few people who would still be raising their hands right about now). The point of holiday baking is to be together and enjoy the love that goes into what you bake, as a family. So even if you make 5 dozen cookies shaped like Christmas trees and are trying to lose weight as a New Years resolution-send them to your neighbors, colleagues or grand kids. Bake together anyway, because it 'tis the season.
Snickerdoodle cookies are the most favored cookies in my neck of the woods. Any time I make them, I bake in bulk but i JUST cant seem to pump out enough of them! I've held dinner parties, birthdays, BBQ's and fiestas and every time my cookie plate ends up empty at one point or another. I hosted a pool party this past summer for my step-son's 9th birthday. We had meat on the grill, tacos on the table and a mound of cookies on the counter. I must have made 6 dozen snickerdoodle cookies and boy were they a hit. Of course the kids loved them as always- but so did the parents! I even caught our friend, Frank filling his mouth with a few on the way out the door as his two little girls walked out with their cookie doggy bags and a giant smile on their face.
So, as it is now December and my 12 Days of Christmas Cookies have begun, I will give you my most prized cookie recipe for any season or holiday.
Snickerdoodle Cookies
1 1/2 Cups Granulated Sugar
1 Stick Margarine
2 Large Eggs
3 Cups All-Purpose Flour
2 Teaspoons Cream of Tartar
1 Teaspoon Baking Soda
1/4 Teaspoon Salt
2 Tablespoons Granulated Sugar
1 Tablespoon Ground Cinnamon
In a large stand mixer or mixing bowl add sugar and margarine. Beat on a medium speed until completely combined. Crack both eggs and blend together. In a separate mixing bowl sift together flour, cream of tartar, baking soda and salt. Add sifted dry ingredients to egg mixing bowl and beat at a medium speed until completely mixed. Place batter, covered, in the refrigerator to chill for one hour. Preheat oven to 350 degrees. Grease each cookie sheet with cooking spray and set aside. In a small ramekin or bowl, add 2 tablespoons sugar and 1 tablespoon cinnamon. Gently mix with a fork until completely combined. Remove cookie batter from refrigerator and form into small 1 inch wide balls. Dip each dough ball into cinnamon sugar mixture on one side and place onto greased cookie sheet. When sheet has been filled, place into preheated oven for 8 minutes or until browned around edges. Remove from heat and let set for 1 minute. Remove from cookie sheet and onto cooling racks until consumption.
(About 5 Dozen Small Cookies- or 4 Dozen Medium Cookies)
Relax, you will have plenty to go around.
