Guilt-Free Cheater Snack: Grilled Veggie Nachos

There is nothing better than knowing you are ALLOWED to eat junk-food. In this case, natural ingredients and vegetable substitutions make this pleasureful vice a healthy snack.

I used one of my favorite, low fat and low calorie tortilla chips- Hint of Lime. A delicious and vibrant assortment of gently (foil) grilled vegetables. I line a small platter of melted cheese nachos with sweet flavors of baby peppers, strong garlic slivers and soft zucchini slices. A real treat indeed. 

Just being a meat-free snack is already a great start to a lower calorie option. Vegetables have almost no calories compared to the normal beef-loaded, sour cream piled nacho plate we are all used to having. Simple, sweet, savory- supple. 



Grilled Veggie Nachos

6-8 Large (Hint of Lime) Tortilla Chips
1/4 Cup Low-Fat Shredded Cheddar Cheese

Grilled Vegetables:
1 sliced Grilled Zucchini
2 Slices Grilled Yellow Sweet Baby Pepper
2 Slices Grilled Red Sweet Baby Pepper
2 Slices Grilled Green Pepper
3 Slices Grilled Garlic

On a microwave-safe plate, add tortilla chips. Cover with shredded cheese and place in the microwave for about 30 seconds or until bubbly and melted. Cover with warm grilled vegetables and serve immediately.
