Forget Me Not, Chocolate Candy Cookies
Happy Valentine's Day; my favorite time to bake with love. Get a bag of Valentine's Day themed M&Ms or any other coated chocolate candies and let's bake a bite of heaven, in cookie form. I use this recipe a lot for baking, mostly around the holidays but feel free to use this with other holiday-inspired colors as well. For St. Patrick's Day add a splash of mint extract next to your vanilla and use M&M's or chocolate colored candies that are different shades of green. For Easter, find the brightest pastel Easter egg candies and poke them into the top of your cookies after they have baked in the oven. Get creative this year because it's all too easy to make it look good.
Chocolate Candy Cookies
3/4 Cup Packed Brown Sugar
3/4 Cup Granulated Sugar
1/2 Cup Oil
2 Large Eggs, Room Temperature
1 1/2 Teaspoons Vanilla Extract
2 1/2 Cups All-Purpose Flour
1 Teaspoon Baking Soda
1 Teaspoon Salt
1 1/2 Teaspoons Vanilla Extract
2 1/2 Cups All-Purpose Flour
1 Teaspoon Baking Soda
1 Teaspoon Salt
1/2 Bag Holiday Milk Chocolate M&Ms or chocolate candies
Cooking Spray
Preheat oven to 375 degrees. In a large mixing bowl or stand mixer, add packed brown sugar, granulated sugar and oil. Blend on a high speed until smooth. Add eggs, vanilla extract and blend until well beaten. Mixing slowly, add flour, baking soda and salt. Continue, scraping sides until all ingredients are completely combined.
Bake for 27-30 minutes or until golden brown. On a greased baking sheet roll out 12, one inch round balls of dough and place into preheated oven. Bake for 8 minutes until fully formed. Remove from heat and place a chocolate candy in pressed into the center of each cookie. Let cool one minute and remove cookies from sheet and onto a cooling rack. Serve warm or store in an air-tight cookie tin or container.
