Guinness-Infused Burley Black Bean Soup





Hello March and welcome Irish tradition. Get ready for some tasty Irish treats and a couple too many pints. Today we are making Guinness-Infused black bean soup. You are in for a real (and burly) treat. This soup is surprisingly light and can be served a number of different ways. I ate this soup with a handful of crackers and had a perfect and healthy lunch. I also served this to my husband with a cheesy, grilled tuna melt on the side and he was in heaven. Use this as a bar-style soup at football games you are hosting, weekends with friends and even for a low calorie leftover option. 

The key is to use all natural and fresh ingredients. You can use fresh beans after they have been soaked and cooked for 2-2 1/2 hours, however, being on the go so often I just used canned beans. Make sure you drain and rinse your beans and have either bullion flavor cubes or broth on hand. Some recipes call for chicken broth or stock, but for this recipe I used a beef stock from 2 dissolved bullion cubes. Throw in a cold and frothy Guinness beer and you are in flavor heaven! I also used a couple spicy surprises so there are definite undertones of savory and spicy for that perfect kick. Not too overboard but definitely not lacking in the flavor department. 



Serve this up with any assortment of guacamole, sour cream, shredded cheese, diced white onion or even tortilla chips for a perfect bar-at-home feel. You can also serve with crackers and grilled cheese bits for a more comfort-feeling dish. Present it any way you like, and don't forget to sample your Guinness before you pour it in!

Guinness Black Bean Soup

1 Large White Onion, Diced
1 Large Vine Tomato, Diced
6 Multi-Colored Sweet Baby Peppers, Diced
1 Medium Jalapeno, Diced
5 Cloves Garlic, Minced
Cilantro Leaves
2 (15 ounce) Cans Black Beans, Drained
4 Cups Water
2 Cups Hot Water
2 Beef Bullion Cubes
1 Bottle, Guinness Beer
1 Teaspoon Hot Cayenne Pepper Sauce
1 Teaspoon Soy Sauce
1 Teaspoon Season Salt
1/2 Teaspoon Salt
1/2 Teaspoon Ground Black Pepper
1 Teaspoon Garlic Powder
1/2 Teaspoon Ground Chili Powder

In a large pot add diced white onion, diced tomato, sweet baby peppers, diced jalapeno, minced garlic and cilantro leaves. Heat over medium heat. Drain and rinse both cans of black beans and add to warm pot. Add 4 cups water and stir ingredients. Heat 2 Cups of water to a boil in the microwave. Remove and add two beef flavored bullion cubes. Stir with a whisk or fork until dissolved. Add broth to pot and one Guinness beer. Season with hot cayenne pepper sauce, soy sauce, season salt, salt, ground black pepper, garlic powder and ground chili powder. Stir, cover and let bubble for about an hour, stirring occasionally. Let cook for a total of 2-4 hours, reducing to low when beans are soft and broth has thickened. Serve warm with any additional toppings (sour cream, guacamole, tortilla chips and green onions).
