Mint Chocolate Chip Oreo Brownies

March is here and our favorite drinking holiday is soon to arrive. Let's break out the green T-shirts, booze-filled beverages and a kitchen full of baked goodies. One classic American flavor that stands out in my mind for the month of March is McDonald's famous "Shamrock Shake". It is a green and delicious- creamy and calorie filled vanilla smoothie with mint flavoring and green food coloring. 

I happen to love mint AND sweets so i decided to make a spin off of classic double chocolate brownie squares, making a  mint Oreo swirl inside each rich and decadent brownie bite. YUM! Make sure you have green food coloring on hand and a good cooking spray. I used my double chocolatey recipe (cocoa powder and chocolate chips), but if this is too rich for you, feel free to omit the chocolate chips or add white chocolate instead.

You can go without making your cream swirl green, or even create your own natural food coloring's using foods like spinach. In this case, I used a spring-time set I had of neon colored food coloring. Lime Green was the color I chose and wow was it electric! Swirl that on top of your brownie batter and bake it in the oven.

So get baking and remember, as long as you are wearing green or EATING green, you save yourself the risk of getting pinched on St. Patrick's Day!


Mint Chocolate Chip Oreo Brownies

Brownie

1 Stick Butter
1 1/2 Cups Granulated Sugar
1/3 Cup Unsweetened Cocoa Powder
3 Large Eggs, Room Temperature
1/4 Cup Vegetable Oil
1 1/2 Teaspoons Pure Vanilla Extract
1 Cup All Purpose Flour
1/2 Teaspoon Salt
1/2 Teaspoon Milk Chocolate Chips

Mint Oreo Cream

1/2 Cup Margarine
1 Teaspoon Pure Vanilla Extract
2 Teaspoons Pure Mint Extract
1 Teaspoon Granulated Sugar
4 Cups Confectioners Sugar
3 Tablespoons Hot Water

Green Food Coloring (I used Lime Green)

Preheat oven to 350 degrees. In a 4 quart saucepan, add butter and melt over medium heat. Add granulated sugar, cocoa powder and mix until smooth, dark and creamy. Remove from heat and let cool to room temperature. In a large mixing bowl or stand mixer, crack eggs and whisk. Add cooled chocolate mixture. Add oil, vanilla and blend on a medium speed until completely combined. Add flour and salt. Mix together until well blended. Stir in chocolate chips by hand or on a slow speed. In a greased 9 x 9 square cake pan, add batter and place into preheated oven for 15 minutes. 


In a separate mixing bowl or stand mixer add margarine, vanilla extract, mint extract, granulated sugar, confectioners sugar and hot water. Blend with a whisk or mixer attachment on high for about 5 minutes until thick and fluffy. Add 10-15 drops of green food coloring and mix together slowly, scraping sides until cream is completely green and well mixed. Remove brownies from oven and Pour entire cream over top of brownie batter. With a butter knife swirl cream with the chocolate until swirl-like designs form but don't become cloudy. Place back into preheated oven and bake for 20-25 minutes until a toothpick inserted into the center of brownies removes clean. Let cool for 15-20 minutes before serving. Slice into bite-size squares for best consumption.
